Vincent presents a lively lemon-yellow color with subtle grayish reflections, giving it a clear and radiant appearance. The aroma is complex and inviting, with notes of ripe tropical fruits and stone fruits from the Premsal Blanc grape, elegantly complemented by citrus hints and a touch of lemon zest. Light barrel aging of the Giró Ros grape adds subtle notes of hay and vanilla, rounding out the wine’s freshness.

On the palate, Vincent is direct, fresh, and at the same time round, with volume and balance. The natural acidity of the Malvasía de Banyalbufar grape is supported by brief barrel aging and lees contact, giving the wine creaminess, elegance, and refined complexity.

Roberta presents a light salmon-pink color with beautiful clarity. On the palate, Roberta is fresh and lively with an elegant, rounded structure. The flavor offers white fruits, citrus, and a gentle sweetness, supported by brief aging on fine lees, which provides balance and length.

Every day from 5:00–6:00 PM, we invite our hotel guests to enjoy a complimentary glass of our carefully selected Family Wine—red, white, or rosé – completely without charge. Matteo Prosecco Brut is produced in collaboration with Domini del Leone, part of the pioneering Fidora family, which has been at the forefront of organic wine production in Veneto since 1974. Their historic Civranetta estate on the Italian mainland lies close to the Venetian lagoon, where the Glera grapes thrive in the mineral-rich Caranto soils, and where the cool sea breeze contributes to slow, aromatic ripening.

Here, traditional principles meet meticulous organic practices in a wine production that places respect for nature and terroir at its core. The Glera grapes, grown without chemical agents, develop a fresh, lively character with fine, elegant bubbles thanks to a careful second fermentation using the Charmat method, lasting at least eight weeks.
